Vegan baked pasta with caramelised onions
Here’s a simple recipe for baked pasta with caramelized onions and lentils, vegan-style:
Ingredients:
- 8 oz (about 225g) your favorite pasta
- 1 cup dry lentils, rinsed and drained
- 2 large onions, thinly sliced
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup vegan cheese (optional)
- Fresh basil or parsley for garnish
Instructions:
- Cook the pasta according to package instructions. Preheat your oven to 375°F (190°C).
- In a separate pot, cook the lentils in water until tender but not mushy. Drain any excess water.
- In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, stirring occasionally (about 15-20 minutes).
- Add minced garlic to the caramelized onions and sauté for an additional 1-2 minutes.
- Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 5-7 minutes.
- Combine the cooked pasta, lentils, and tomato-onion mixture. Mix well.
