Vegan baked pasta with caramelised onions

Here’s a simple recipe for baked pasta with caramelized onions and lentils, vegan-style:

Ingredients:

  • 8 oz (about 225g) your favorite pasta
  • 1 cup dry lentils, rinsed and drained
  • 2 large onions, thinly sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup vegan cheese (optional)
  • Fresh basil or parsley for garnish

Instructions:

  1. Cook the pasta according to package instructions. Preheat your oven to 375°F (190°C).
  2. In a separate pot, cook the lentils in water until tender but not mushy. Drain any excess water.
  3. In a large skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, stirring occasionally (about 15-20 minutes).
  4. Add minced garlic to the caramelized onions and sauté for an additional 1-2 minutes.
  5. Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 5-7 minutes.
  6. Combine the cooked pasta, lentils, and tomato-onion mixture. Mix well.
  7. Transfer the mixture to a baking dish. If you like, sprinkle vegan cheese on top.
  8. Bake in the preheated oven for 20-25 minutes or until the top is golden and bubbly.
  9. Garnish with fresh basil or parsley before serving.
